I confess, until this event, I had never heard of a Pohutukawa Cake before. Turns out it’s a most wonderful treat that’s created at Christmas time in New Zealand. I’ve read that it’s a honey-soaked walnut cake (which already sounds absolutely delicious and far more appealing than our traditional heavy, fruit-laden British Christmas Cake) and is decorated with a traditional Pohutukawa flower decoration. Isn’t it splendid? It’s too late to make one of these in real life but I’m tempted to make one next year. Until then, I shall satisfy my urges with this beautiful cake created by INNER DEMONS {ID} available at the Christmas Around the World event which runs until the 22nd.
